I have no experience with the 1100 or the Streetfighter, but both have gotten great reviews from members here.
I have a 695 myself, and I have ridden my husband's 2004 former S4R (stock) quite a few times. For twisty riding, I actually prefer the 695, it's a lot easier to corner on, turns very easily, whereas the S4R required much more effort to turn. However, for freeway riding the S4R was pretty nice, course it gets up to speed very quickly and was pretty smooth (although won't be smooth like an inline 4). I don't know how the 1100 or Streetfighter would compare.
I personally prefer the look of the air-cooled bikes over the liquid-cooled, but on the other hand I prefer the older Monster styling to the newer Monster styling.
As far as service is concerned, my understanding is that 4V is considerably more difficult (and therefore more expensive) than 2V, adjusting the valves is more than twice the work.
