What happens if you go past the minimum thickness of a rotor? Does it warp easier because its too thin to handle the heat?

Yes, thickness matters. Rotors must have enough meat to absorb and dissipate heat, and to maintain their structural integrity. Thin rotors are dangerous rotors that increase the risk of heat fade, cracking and failure. That is why most rotors have a "discard thickness" or "minimum machine to" specification on the casting. If you can't find it or the numbers are illegible, look up the spec in a service manual or electronic database.
I have a set off my 749R if you're looking for a used set...
Aren't the stock 749 rotors different? I thought they were deeper insets on the carrier.

As compared to the Monster 1000 (that the original poster has) yes... 15mm offset (749/999) compared to 10mm for the Monster S2R1000.
and 5 bolt vs 6 bolt for the S2R
Ya, these rotors are:
Outer Diameter 320mm
Inner Diameter 72mm
Thickness 5mm
Number Of Holes 5
Offset 15mm
