I think the fresher the roast, and the fresher the grind, the better the coffee.
I ended up with a Saeco Vienna last year, and it made a real difference in the quality of even cheap coffee. Once I found a local roaster, the fresh roasting made a big difference as well.
Fresh roast makes a big difference, but some roasters are clueless.

I really like Tim Horton's coffee. I buy the big cans and run them through a Bunn home brewer. I also buy roasted beans from a really good grocery store and grind them at home as well.

I rock a French press - I usually use Starbucks beans, typically French or Espresso roast. Sumatra used to be my de facto bean, but it seems like the taste or my taste for it changed. Vienna is also nice, but I am not a big fan of the others. Peet's French roast will sometimes get in the rotation when it is on sale. I have tried a few forgettable organic brands - none of them seem to roast to my liking.
We recently broke our Bodum press, and have fallen back to using an Ikea press I've had for years - the grommet holding the screen to the plunger shaft was made out of plastic. The Ikea's is metal - I think the Bodum was about $30, the Ikea was probably $12. I recommend the Ikea :)

It cuts down on, but does not eliminate entirely the dust which turns into sludge I would get when I used a blade grinder on the beans and then French pressed it. It is a bit messy (static and the chute design keeps about a teaspoon of grounds ready to leap out on your counter and floor when you're not looking), but I would still recommend it, especially for the money.

Best coffee I've had was when I was down in Uganda. There was one plantation located on in island out in the middle of Lake Victoria that had STOOPID GOOD bean!! Second best was from a plantation not far across the border into Kenya. I was able to smuggle about a hundred pounds of bean back with me into Germany from that deployment. [thumbsup]

12 ounces does seem like an arbitrary unit, but my last 12oz bag of Charbucks from Krogers was $7.99/12oz, so... $12/lb
I used to hate having to pick up a bag every week or so, but now I like that fresh beans only sit in my hopper for a week or less. Also, you get a free tall coffee with each bag if you buy in the grocery store, so it comes out cheaper than buying from Starbucks. Also, also, it tastes like the beans from the store are fresher than those from a starbucks. YMMV.

Interesting fact about coffee is the darker the roast the less caffeine left in the bean. Hence a standard city roast, which is lighter than a french roast, will have more caffeine than espresso per volume, espresso being an italian roast.
Another thing is if you like coffee but suffer from heartburn like me, try espresso in place of your usual coffee. Gives me no heartburn whatsoever.
I've always wanted to try Kopi Luwak as well, though even on closeout it ain't cheap -- $30 and shipping for just shy of 60 grams:

I remember reading that dark roasts have less caffeine by volume, but more by weight - longer roast = less moisture in the bean = less weight. Beans get bigger the longer they are roasted.
I tend to think there are comparable amounts of The Good Stuff by prepared volume ("strengths" being equal).

I mentioned this in your other thread, but the la cimbali grinder at work is indeed a large blade grinder, but it's sort of a hybrid burr/blade grinder. Wonderful and consistent grounds.
I like a good Indonesian dark roast. Earthy flavors and low acidity... mmm. Starbucks sumatran is good. Switching to whole bean from pre ground was an improvement even with a blade grinder and a coffeemate drip machine.
Back in college there was a coffee shop that French pressed all their regular coffees. Used to drink their sumatran till they switched to beans from Jakarta... that was damn good too!
If you use sweetener, try this, when I grind my beans I put raw sugar in with the grind.

At that time I also had a really shitty GMC truck that would overheat and die. To this day I equate the smell of coffee beans roasting to my car over heating. I have been places on my motorcycle, smelled coffee roasting and thought my bike was overheating. [bang]

As much as the smell of brewing coffee or roasted coffee beans gets the pleasure centers in my brain moister than Pavlov's mutts, the smell of roasting green coffee is pretty off-putting to me.
I didn't start drinking coffee till about 8 months ago.. at age30... no favorites yet cuz they all still kinda taste like crap to me..

Indonesian beans can be spectacular but lately I've really been into Costa Rican beans for a low acidity naturally flavorful brew. Also, when I went to visit El Mat's family in Venezuela we picked up some AWESOME beans for wicked cheap but apparently they don't export anymore, the damn socialists >:(
For mediocre beans, I grind a cinnamon stick and nutmeg nut with the beans - its pretty damn delicious!

Guys were talking about how it made better espresso than most mid-high level espresso makers, cost a fraction of the price and take up no space. Many had said they simply got rid of their expensive machines as they just didn't use them anymore.

I took it to work to test it for the guys at the fire station. They now refer to it as the "crack pipe".
It makes ridiculously awesome espresso and americanos.

Jack's stir brew, just did a job in his house.. he has a coffee shopon west 10th by Greenwich. Ave.. made, designed his own machine... kind of like a French press he said but it stirs.. anyone use the machine..
He gave me a cup on the house... I can't tell if its good or not.. I'm not big on coffee and I take light n sweet.. its organic fairtrade shadegrown, says on the cup..

I've been messing around with 'cold brew'. Over the years I've always made iced coffee in the summer. My mom always had a pitcher in the fridge. Reading more about the 'proper' way to brew it. We always just brewed the coffee, let it cool and put it in the fridge. Apparently that's 'the least desirable way to do it. 'They' say the 3 ways are...
1. What I just said (meh)
2. Brew and immediately pour over ice (better)
3. Cold brew (best)
There are several devices to brew with. Im just using a French Press. Ground the same as hot, use room temperature water, brew 12-14hrs. Easy peasy.

Normally a black and bitter kind of guy, but they were weirdly pushy about their weird coffee. Butter, mocha, and whey... least weird option I could figure out without any caffeine in my system.
Not as weird as expected, but we didn't return. She had the pumpkin spice latte, which had actual pumpkin in it. Apparently not in the slightest like the Starbucks version.
C&H showed up today.

Been experimenting with cold brewing my own. Using pre-ground Dunkin Donuts coffee. I have a french press I load the night before and put in the refrigerator overnight. I've been altering the time, amount of coffee, and whether it's refrigerated. So far, I've had what I think are good results. Coffee definitely tastes smoother.
I drink it hot, microwaved in the cup for about 90 seconds.
You don't 'cold brew' in the refrigerator. You brew it at room temp.

Well shit. Just did a little more research and there doesn't seem to be any consensus. Everything from brew at room temp with room temp water to in the fridge with ice water, 8-12 hours versus 18-24 hours and everything in between. Then there's the folk who brew it for well over 24 hours then dilute it 50/50 with either hot or cold water (or milk, no thanks).
I go 12hrs ish, room temperature. Avoid the fridge during brewing. Them little beans get chilly in that cold water and don't deliver the full punch.

I bought my wife a KitchenAid cold-brew maker for her birthday, it seems to work pretty well. It has a microperf 'drum' you set in the middle full of coffee and you pour water through it and let it set for 24. I don't know if she puts it in the fridgeitater to brew or not... I'll have to axe. My only complaint, besides the $100 price, is it doesn't make just a whole lot... I think it yields around 60oz... and it uses a good deal of beans.

I don't get the Geisha coffee craze, I don't really like it myself. I have 60 Arabica plants on my property and roast my own old shool style. Much better IMO.
