Now that I'm all settled into the new place and actually have a backyard to speak of, it's time to dust off the ole homebrew kit and brew up a batch of the good stuff. We are thinking of doing a chocolate stout this time. For those of you not familar with the process you basically cook the stuff (wart) for a few hours then chill it, add yeast and let it sit for about two weeks. Then transfer to bottles and let sit another week. For anyone interested in seeing how it's done, or anyone who has good experience in this, and wants to watch/participate let me know. I'm thinking of cooking the batch around the end of the month, no solid dates yet, just gauging interest. Just so I can manage expectations the cooking process is basically standing around outside for about three hours... but it smells really good. [drink]

So the weather is calling for a slight chance of showers early but I'm more concerned with the wind. 20 to 30 mph will kick up a lot of dirt and other nasty things that I'd prefer not be in the beer. Pretty much. About 5 gals cooked outside, poured into a 7 gal bucket to ferment. Huge propane burner... not a good toy for inside.

My Bar-B-Q is broke so we figured we'd order a bunch of pizza from i Fratelli and there will be plenty of beer [drink], wine [wine], soda, water and other snacks for all. You are welcome to bring some to contribute but it's not required. Bring a friend or two as well.

Do you control the fermentation temperature?
The temp will effect the flavor profile...
-and towards the end of fermentation you can run into a "wall":
If the temperature is too warm, the yeast will die earlier, leaving residual sugars, and a lower-than-possible alcohol strength.
If it is kept cooler towards the end, the yeast can live in slightly higher alc%.
A lot depends on the yeast you're using.
I used to get some "Turbo" yeast which would yeild just over 20% alcohol if done right... ;D
17.5 Lbs of white sugar dissolved into 5 gallons of boiling well water, cool the "wort" to 70°F, pitch the yeast...
As the fermentation slows start running cooler and cooler ...down to about 60°F
Much cooler than that the yeast will go to sleap.

Sadly no. I just have a seven gallon bucket that's sitting in the second bathroom. I keep the place around 72 right now but that's as far as I can go to control the temp. I do use White Labs liquid yeast and it has served me well in the past. The temp thing would explain why I always end up with a beer around 4.5 - 4.8% alcohol.

I am happy to report that all the little yeasties have all gone to sleep after stuffing themselves with copious amounts of sugar. Based on recent reading I believe this batch will produce about 5.25% alc, my personal best. Not a Blindness Causing RichD beer but I'm happy. I need to get them into bottles pretty soon so I'll just take care of that after work either Tuesday or Wed. Short notice, and not a great day but those who want to watch may. Not a party, just a bottling. Once that's done they should rest for about 3 to 4 weeks and then... [drink].
My dad is retired and seems to be getting bored with his other hobbies so I was going to get him a homebrew set up. I don't have a clue about the whole process anyone know the best place to get a startup kit?

I got mine as a gift so I couldn't tell you where it came from. I will say, I like the setup I have. Two seven gal plastic buckets, a few hoses, a bottle filler and a few other bits. My best recommendation would be to spend the money and get one from Austin Homebrew. They have a 2 Stage Plastic Secondary kit for 213.99. Yes that's high BUT! they give you all the goodies I ended up having to buy anyway... like a bottle capper, better siphon hose AND they have something I don't, a wort chiller. Basically it's copper tube in a large coil that circulates cold water to help cool down the wort, which is a pain. There may be less expensive kits out there but I would use that as a guild as to a good first setup. You don't need a wort chiller, and I still don't have one, but everytime I do a batch I wish I did. If your Dad is handy, he can make one and there are several online guides to doing so.
There is a homebrew place in Dallas, Homebrew Headquarters, and while they are good to talk to, the Austin store is better stocked and they have more recipes to choose from. Also, their instructions are much more clear, especially if it's your (or your Dad's) first time. Finally, there are a good number of books that describe the whole process and I'd recommend getting and reading at least one to fully understand what's going on. I have "Home Beermaking, The Complete Beginner's Guidebook", by William Moore. It's a short book, good for people like me with short attentionspans, like me.
One last thing. It's a personal preference, but I like plastic buckets over glass. It's a safety thing with me. If you really mess something up, plastic expands, glass goes boom! And it doesn't break if you drop it.

I'm back! Sorry all, we moved back to uptown last weekend and let's just say getting internet hooked up is ridiculous! Time Warner Cable, you had your chance, and failed. So At&t wins even though they can only provide DSL. But I digress...
The beer is fine! This weekend actually marks the third week which is the earliest this batch can be put on ice. So I will put a few in the fridge tomorrow and save others for next week.

Here's the bad news, I live in uptown again and while I have a garage, I have no drive way, pool, or yard (thank God!, Suburbia can kiss my [evil]).
