So, instead of being totally irresponsible and spending money on powder-coating a frame and some engine side cases, I'm looking for a beach-cruiser type bicycle for my wife.

The Felts look really cool. You could also check out Trek. Some of their cruisers have aluminum frames, saving a lot of weight. Also some of them have geometry permitting the rider to have both feet on the ground while seated. They don't look as cool as the Felt bikes, but with a couple mods and some cool paint, you would be styling. Check out Trek Pure.
After going down to the local bike shop, I settled on a Manhattan Ladies Flyer in baby blue.

I looked at the Trek's online, wasn't really turned on by em. This bike isn't about performance... it's about lazily pedaling down the bike path. So, coaster brakes, cool retro paint, and steel is the order of the day.

Interesting ideas... except the gov't owned house I live in now doesn't even allow for painting the walls... let alone replacing the fridge.
I vote for Nirve. There's mine below. They have some nice lady's bikes and are slightly less expensive than the Felts.

I have the Electra Super Deluxe and my wife has the Electra Gigi. We like them a lot.
Came in today, gave it to her a few days earlier cause we are going to see family over the weekend:
