Eggnog:
1 dozen eggs
1 gallon whole milk
2 cups sugar
1 cup rum
1 cup brandy
1 cup rye whiskey
1 teaspoon salt
1 nutmeg
Separate the egg yolks into a big bowl or soup pot. Put the egg whites in a smaller bowl
Add the sugar to the egg yolks and mix with an electric mixer, add in the booze 1 cup at a time
Mix well so there are no sugar granules. Stir with a spatula once or twice during the mixing process
Add the salt and mix
Now add the milk and mix some more
Grate almost the whole nutmeg (it helps if you have a nutmeg grinder) into the nog
In the other bowl, mix the egg whites till they stand up and have peaks
Fold the whites into the nog
Grate the remaining nutmeg over the top to make it look pretty
Drink!
Nowhere near enough booze! A proper eggnog should have the consistency of skim milk!

Mulled wine:
1 bottle of dry wine (Zin, Cab, Merlot)...don't over spend since you're cooking it...I like a more tannin, structured wine
8-12 cloves
3-5 cinnamon sticks
1 medium spoon of whole all-spice berry (if powdered, then use a few dashes only)
1 small orange (quartered)
1/2 cup to 3/4 cup of sugar
Very low heat for at least 25 minutes for the spices to mix; do not boil as it will turn bitter.
I would pick the mid-point for the spices and the low end for the sugar...you can always add more sugar easily, but you cannot take away sugar or spices
Before serving, add 1/4 cup of brandy (I prefer french).
Garnish with cinnamon stick as stirrer
the xmas/hangover breakfast drink:
well, it's basically a screwdriver using three olives chocolate vodka, and pineapple juice instead of orange.
sounds weird; make the beast with two backsing tasty.
Pear Noel
In a champagne flute:
1 oz pear brandy (I use Clear Creek (http://clearcreekdistillery.com/pear.html) brandy)
3 oz champagne
Garnish with a frozen pear slice.
i had one of these every night in ireland, it's a perfect holiday/winter warmer ;D
Hot Irish Whiskey
1 1/2 oz jameson irish whiskey
1/4 oz lemon juice
1 tsp sugar
1 slice lemon
3 cloves
4 oz hot water
mix jameson, lemon juice and sugar in a heat-resistant glass, and fill with hot water. Add a lemon slice speared with cloves, and enjoy!
