Last week my wife called me from Costco......"Is there anything you need?", she asked.  (That was a mistake)  Towards the end of my list I told her to pick up a pork shoulder.  I wanted to make a Mojo Criollo.  "They are BIG" she said.  I told her to just buy it and i would pay her back, thinking it was a 5 lb shoulder instead of the normal 3-3.5lb variety.

Fast forward.  We are unloading the car. "Open the trunk" she says......"your piece of meat is in there!"

I opened the trunk and in between the mega pack of TP and paper towels is a vacuum sealed package about 18" x 18" x 6" stuffed with some sort of "meat".  I looked at the label and it said "Pork Shoulder".......it also said "17 (freakin) lbs!"  Dont know if it's an entire pork back.....if its multiple shoulders stuffed into one bag or what.  I dont feel like making more than one Mojo Criollo (smoked pork shoulder stuffed with ham, bacon misc. spices and guava).

Any suggestions?

First step is see what you got.  That shoulder is either from Moby Pig, there is much more then the shoulder in the cut or more than one shoulder.  Then it is time to explore your options.  Sounds like block party time!

Maybe 2 or 3 smokers! Damn. I've shot wild feral hogs that were about that size. [bacon] ;)

I get that big hunk of pork at my Costco and make sausage out of it!

You could carve off 5lbs and make sausage. It's not that hard and other people will be amazed.

Marinated and cooked half of the 2 piece package on the Big Green Egg for a Mothers Day get together.  That was some damn fine pig!

Ive got the other half marinating in orange juice, cumin, garlic and some other spices......probably going to freeze it until Memorial Day.

What kind of sausage?  Stuffed in a casing or loose, breakfast type?

not really into the meat scene, aside from loving to eat it. i AM, however, disappointed in the lack of photography in this thread.

To put your mind at ease.......I didint know that I was going to BBQ it!  Just needed to know wtf it was!
