Especially ones with 4 eggs and a huge dose of something my wife calls "vegetarian chilli"

Most eggs I've ever used in my own omelete?

10. And it was a cheese omelete.

Eggs are one of my favorite foods.

Cheese and onion omelet
fried eggs
scrambled eggs
egg sammich
poached eggs
deviled eggs
red beet eggs
egg on top of pizza
egg on top of my "greek" chicken casserole
etc.

Mmmmm...eggs.

here are our "specialty omelets" we cook at work
CRAB w/ spinach,tomato, and swiss
PORTOBELLO w/ spinach and brie
VEGGIE w/ sautéed veggies, cheddar, swiss, and provolone
WESTERN w/ onions, tomatoes, green peppers, ham, and american cheese
SUN DRIED TOMATO w/ feta and artichoke hearts
HUEVOS w/ black beans, cheddar, avocado, and salsa
SMOKED SALMON w/ dill cream cheese and capers
CHILI w/ cheddar , tortilla chips, salsa and sour cream
BACON & BRIE w/ grilled onions and spinach
ROAST PORK w/ spinach and swiss
try a pizza omelet w/ marinara, fresh mozz, basil and fried salami!

My "workout" special omelet...(My trainer was insane with his diet requirements for me but it mostly worked so...)

8 egg whites
2 egg yolks
2 tbsp some kind of salsa
4 oz diced grilled chicken breast
1 oz shredded cheese

Damnit...now I want an omelet.

Cubed grilled chicken that's been tumbled in wing sauce with blue cheese crumbles is a damn good variation....  ;)

(yes, I was hung over and it was what was in the fridge)

A) kevin, i hate you for this thread right now. I have no eggs and really want to make an omlete

B) Brix, I don't care what my schedule is, the next time i go past Richmond I'm stopping and ordering food. It never seems to work out for eating.

C)i have to run to the grocery store..... ;D
