Starting to try cooking soba, figured I'd ask here what you guys/gals like. I pretty much make some Udon every day, but I've never cooked Soba. Got some nice fresh noodles, some oyster mushrooms and some Beef Filet. yum

Just made myself some simple Soba, with Nori shread garnish. I made a Dashi sauce with fresh grated Ginger and Horseradish, balsamic vinegar and some Ponzu. OMG! Could not be more simple, but delicious and nourishing.
I have never had Soba in a restaurant, but I am pretty good at recreating a traditional process. I think I got (at least this recipe) nailed. Now for the limitless experimentation. [evil]
I believe these buckwheat noodles just have the best chew, flavor and nutrition of any noodle(pasta) I have ever had. Just awesome.
Made a nice salad for dinner with Blanched Woodear mushrooms and crispy fried Tofu. Tossed it with an Hache miso, sesame dressing. OMG I'm a noodle eating fool. lol
