What's it called and where can I get a new one? It's between the grip and the fluid reservoir.

You will need to buy the whole piece. Dealer item or try to find one used.
Throttle housing. I'm sure your local dealer could get you the part or try Pro-Italia's website as they have the parts diagrams and can get most of the bits for you.
I have a throttle assembly w/ cables I'd sell. Its off a mid 90's SS but I'll bet its a match. If you send me an email @ silas1064@hotmail.com I will email you photos of it and a price.
Mid 90's SS throttle is different from the OP's.
