I've been looking at good gas grills etc. I did the consumer reports search and even the nicest grills have shortcomings. I use them 5-6 days a week pretty much year round, so I need an industrial grill. This led me to Kalamazoo grills. Amazing stuff, gas, wood, charcoal. The cheapest one is $12.5k. I thought there's gotta be a middle ground. Voila, I found Grillworks.

Argentinian style grills, truly amazing stuff. They're a small company in Wisconsin, one lady answers the phone, nothing in stock, each grill is made to order. It'll be 8-10wks before I get it and I can't make the beast with two backsing wait.

Finally got a chance to look over the Grillworks site - those look like serious gear, and worth every penny (which I will need to save for a while...)
In the interim, I've found these drop in grates are a pretty good upgrade to most of the consumer level gas or charcoal grills out there, reducing flare ups and doing a much more even job of conducting heat:

Yeah, there's gonna be a fairly steep learning curve with wood, so I'm gonna do some test burns. It was ready to cook on in under 30, which is no issue for me. I bring steaks to room temp which takes 40-50mins anyway, so now I'll just light the beast first, prep work etc. I fully realize I'm gonna make the beast with two backs some shit up, but I'm in for the journey.
My boys all get food pics every night. Sometimes I'll shoot a vid. They all wanted to see the grill, so I sent them this. Some bad language.
