Wouldn't that whole comparison sort of be influenced by the monitor?

The comparison was done in direct comparison to the film transfer. Apparently with Aliens it was one of the most challenging to do to date because the film type that the movie was filmed was a new sort at the time which never took off. The result was a muted appearance. The conversion eliminated that, leaving nearly a new movie.
