I'm looking at ordering a set of danmotos for my carbed 900. But I'm tired of dragging my pipes when I decide to drag my knee a little bit. So here's my question. If I bought a set of low mount dans, how could I set them up to be high mounts? Would I need new rear sets, can I buy high mount mid pipes or should I make my own.

I have the DM conicals. They are low mounted but the difference is that the conicals are pretty small in length and diameter compared to stock cans.
I'd say get the DM pipes of your choice and fab your own mid pipes to run em higher.
