How can you tell if you're running lean?

got it up to temp, rode it hard got it back in as soon after as possible, let it cool a bit, then pulled the plugs.

horizontal cyl was a little lean but ok, vertical cyl was whiter then #22..

It also surged, and had a slight lean miss when going to accelerate onto the highway..

I cleaned the plugs, installed the baffles and did it again and it was back to like #13 or #14..

but its really quiet again, and that makes me sad (sounded awesome unplugged)

I'm hoping a better solution to the DP ecu comes out soon.
