Lol!  That's funny!  If I run into too gnarly of a piece, I leave it for Dad's hydraulic unit that's almost as old as I am.

Down here, it's Black Walnut that can be a serious pain.  It's like hitting a rock.

The smooth barked Eucalypts we grow are generally nice n easy to split....  straight fibres, few branches to gnarl things up.

Today though I was splitting Blackwood (Acacia, aka Wattle).  Its great firewood and fast growing... but it its more effort to split and more effort to tidy up after thats for sure.

Maple & Oak sound similar to your Eucalypts, but probably more branches.  Around here, both are plentiful, and Oak makes plenty of heat.  Locust is another one that is difficult has lots of bits that shatter off.  However, Locust makes A LOT of heat.

Elm, which the old timers used to use for wagon reach poles, are almost gone here due to disease, but is hard as a brick if you come across one.

Yellow Birch is just nasty. The fibers seem to go in every direction and don't want to let go. Great wood once it's opened up.

Maple, red and white which is sugar maple, Oak, Ash, Beech are all fairly straight grained and split well. I like Ash because you can cut it in the morning and throw it in the stove that afternoon. Burns green or dry.

I'm good at burning green. I was at the beer distributor's yesterday and $60 disappeared!

Australian Cypress Pine (pine is a misnomer, its actually a hardwood) is like that too.   When we've been out of firewood, I've been known to lop off a Cypress limb, log it, split it...  and burn it.

My BIL has a new hard cider for this year.

Not as good as DIMBY cider, but good.

It was a blend of apple ice wine and cider...about equal parts IIRC.

The production cost, because of the value of the ice wine, would make it a financial loser if sold as cider. It would be worth extra money to me, but probably wouldn't sell to the general public
