It comes out of trees...and you 'just' boil it and enjoy.  ;D

I always buy the real stuff, aintjemimas..  I want to make my own but if I remember reading correctly, need a cold season for the trees?  might not work in TX..

You need cold, but you need a 'season' of cold nights and warm days.

The days, as they get warmer, causes budding and the sap flow stops.

The actual temps will dictate the grade/color of the finished syrup.

It's pretty scientific for a bunch of farmers. ;D

While this guide focuses on maple trees, other types of trees can be tapped. For example, Birch and Walnut trees can be tapped and will yield a sweet sap. These trees are not generally used in commercial production of syrup because the sugar content is lower, which would result in higher expenses. Alaska, where maple trees do not grow, has a thriving Birch sap industry.

I wouldn't mind the less sugar content.  it'll be for personal use.  maybe barter in the long run.  thanks.  I'll look into that n see if there's a different process for it.

The lower sugar content just means you need more sap to make syrup.

I really need summer to get here ASAP. We moved back from the southern hemisphere as winter was ending straight into fall up here. We have some big things planned, like a road trip for 4th of July, most likely DC.

Yeah, last time I was warm was around this time last year. At that point I was looking forward to skiing. Now I just want to spend a year at the beach.
