Only $4 a pound here in Boquete, Panama. The only Carne de res (red meat) I'll eat. I grind it with pork fat and spices to make the best hamburger you've ever tasted. BBQ'ed and butter suteeded medallions of course and also many styles of Mexican cooking that I grew up with. Filet's in California, 15 years ago were $24 a pound. These are VERY tender organic and grass fed. Mmmmm!

This is a local cattle ranch 10 miles from my house. The two cow backstraps I bought were only two hours old from slaughter to meat cutting and in my fridge. Most beef cuts are better aged, but filet's are better fresh cut. I'm loving the burps coming right now also. Damn good!
