Has she ever tested a full on 1000cc sbk yet? Just wondering if she has some big bike (as in fast as shit!) experience yet. All I have ever read about her has been related to 600cc bikes.

I agree. It's great for publicity and it'll be a great experience for her. Remember, even Ben Bostrom was somewhat humbled by the Honda at Laguna Seca. Apparently it's a whole different ball game.

Nope.  Age of Consent in TX is 17 and they have a "Romeo & Juliet" law which allows a partner to be 3 years older.  So a 17 yo could be involved with a 20 yo. 

Legal adult in TX is 18, just like everywhere else.
