From what I understand the bacon in spaguetti carbonara is only supposed to be sprinkled on top. I was told the original recipe stems from:

Lots of egg yolks (say 10-15) beated and slowly heated, being constantly stirred so it doesn't stick or cook through and as it warms up you start adding parmigiano cheese finely grated (or grana padano if you want to be cheap) to nearly the same volume as the egg yolk to this you add lots of black pepper.. some say nutmeg also, I add a small pinch and then add the warm, cooked pasta and serve immediately with more grated parmigiano on top and a sprinkling of fried, crispy pancetta.

The cream etc. was added later to the recipe and to be honest it tastes damn good also. Instead of cream I prefer evaporated milk as it has a lot less fat.

I make this every once in a while and my daughter just loves it!

I like nutmeg in my tetrazzinni and alfredo, not so much in carbonara. I think it gets lost in all the bacony goodness, unless you put a ton in there.

recipe I use is hijacked directly from an italian fella, who happens to own two restaurants in honolulu... it is teh awesome!

hell, who am I kidding, carbonara in every form I've tried it has been dang tasty  [thumbsup]

Carbonara recipes, like Cacciatore or Marinara change from region to region.  What stays costant is pasta, egg, cured dead piggy and black pepper to mask the charcoal dust.  Sometimes I use the heal from a quality prosciutto.

I'm going to get a couple of pounds of bacon today. One pound for me and the dogs and another pound to make sure I don't end up in the dog house.

Mebbee. I cooked a pound & a half this morning, me and the dogs ate as usual, and I brought in 6 pieces to sleeping beauty which she didn't want this morning. I put the pieces in the microwave so if our house guest doesn't eat them, there should be no problem.

Exactly! It's easily half the weight upon cooking. It's only eating a pound if you buy two.
If the state had not cut funding for the mental institutions, this project could never have happened.
