This has taken WAYYYYYYYYY longer than I expected, but finally, I have finished the seat.  I first had it assembled by someone who does this for a living and I was not comfortable with how he did it.  So I had to undo what he did and come up with a new way to assemble it that seems safe to me.  Then it took forever to find someone who was able to put the stripe on correctly with the complex bends this thing has.  Here it is:

Sweet. Looks real good. Did you make it or buy it?
Also, can we see how it's mounted to the frame?

I bought the top part from a company that is now defunct in Italy a few years ago and was bewildered about how to assemble it.  In the end, I mated the top part to the seat pan of a OEM seat with spacers for the correct height so it mounts to the frame like the original seat did.  I'll try to get some pics of it later today.  I had originally had the same thoughts about the seat pad and really didn't know what else to do but I rode it a bunch yesterday and although a little firmer than the factory seat, it's not as bad as it looks.  The next one will be wrapped in some sort of leather and I'll figure out a way to make it a little more plush.

They make gel pads that would go with foam well and work in that thickness You would have to do some trimming and inset the gel into foam with a thin piece over the top to hide the seams under the cover.  Be super comfy!
